Cocktail of the Week: Counselor’s Hooch

Chicago’s The Dawson is taking customers back to their childhoods with Camp Dawson, its summer camp-themed pop-up. As summer camp has been one of the most popular settings for horror films, from 1980’s cult classics to icons such as Friday the 13th, Camp Dawson 2: I Know What You Did Last Summer… Camp will pay homage to the genre a chilling summer cocktail menu and activities. 

The cocktail program is intended to leave patrons “scared stiff” and this Penicillin riff infused with botanicals will definitely scare up some fun!

Ingredients:

  • 2 oz. Glenlivet Founder’s Reserve (infused with lemongrass, dandelion root, chicory root, lemon peel, sassafras bark)
  • 1/4 oz. honey syrup
  • 1 spritz of peat monster scotch rinse

Instructions:

Pour scotch and honey syrup into a mixing glass with ice and stir. Spritz your highball with rinse and strain cocktail in. Garnish with a lemon peel.
