Cocktail of the Week: The Pendennis

As the seasons prepare to change, so to do we, focusing now more on stirred cocktails as we head into the new month. This week’s cocktail, named after the private club where allegedly the Old Fashioned was invented, comes from Christiaan Röllich, head barman at Los Angeles’ a.o.c. Learn more about Röllich’s secrets in his cocktail book, BARCHEF: Handcrafted Cocktails.

Ingredients:

  • 2 oz Elijah Craig Bourbon
  • 1/4 oz Angostura Bitters
  • 1/4 oz house made all spice dram *
    • 1 cup Wray and Nephew Overproof Jamaican Rum
    • 1 cup water
    • 35 gram allspice
    • 1/4 tsp black pepper
    • 1 star anise pod
    • 1/2 tsp cloves
    • 1/4 tsp ground nutmeg
    • 1 cinnamon stick
    • 2 cups sugar

Instructions:

Built in Double Old Fashioned glass with large format ice and stir till cold. Garnish with a lemon and orange twist.

For all spice dram, blend all the spices in the blender till roughly chopped. Put water, rum, spices and sugar in a sauce pan over medium heat. Make sure the flame doesn’t go around the pan as it will light on fire. Bring to a boil. Take it off flame and let it cool to room temperature. Put it a way in a container and let it sit over night. Strain through a chinois or cheese cloth the next day.
