Cocktail of the Week: Emerald Old Fashioned

This week’s cocktail is celebrating the luck of the Irish obviously. Created by Joaquín Simó of Pouring Ribbons, this Old Fashioned riff was created in 2020 for Knappogue Castle’s The Knappogue Club pop-up in New York.

Ingredients:

  • 2 oz Knappogue Castle 12 Year Old Single Malt Irish Whiskey
  • 1 tsp honey syrup (2 parts wildflower honey : 1 part water)
  • 1 tsp Green Chartreuse
  • 1 tsp Dolin Genepy des Alpes

Instructions:

Add all ingredients into a rocks glass then add ice and stir briskly until chilled and combined. Garnish with a mint sprig.
