Redbreast Celebrates St. Patrick’s Day With Pairing Menu

Happy St. Patrick’s Day! If you’re looking to celebrate tonight with good food and great Irish Whiskey, Redbreast Single Pot Still Irish Whiskey has you covered.

Pernod Ricard Whiskey Ambassadors Dominic Venegas and Robert Ferrara have created a full menu of food and cocktail pairings perfect for the holiday… or any day.

For the appetizer course, pair a charcuterie board with a Redbreast Espresso Martini (recipe below). “Irish whiskey & Irish cheese are classic pairing. Traditionally it would be a beautiful Irish cheddar cheese which is bright and mellow, and has flavor tones of hazelnuts and brown butter, often ending in a sharp long finish which pairs perfectly with all the dried fruits and spices you’ll find in Redbreast 12 yr. Inspired by that pairing, I would pair Redbreast 12 yr with a hearty charcuterie board.”

For the main, how about roasted salmon or sushi with either a Dublin-Style Mint Julep (recipe below). “Another classic pairing would be a beautiful wild caught salmon, simply prepared, roasted with some fingerling potatoes with lots of butter, a touch of lemon and pinch of dill. Less is more with this pairing as you really want the ingredients to shine and work together harmoniously. Now if you’re not up to cook this year or go out to eat, here’s a fun pairing: Sushi! Hit up your local sushi restaurant for takeout and order some of your favorite rolls, some salmon sashimi, throw in some tuna and be prepared to be mind blown how good whiskey pairs with sushi. Move over sake.”

Finally, end the meal with a dark chocolate mouse or creme brulee with a Cork Cobbler (recipe below). “Chocolate and whiskey have been paired together forever and there’s a reason for that, it’s delicious. A chocolate mouse is going to be rich and complex, with a deep velvet texture of dark chocolate which when paired with Redbreast Lustau is going to open all those beautiful dried orchard fruits hints of nuts and baking spices you’ll find in the whiskey. Another fun pairing is Redbreast Lustau and crème brulee. The vanilla bean, caramelized sugar and silky texture of a crème brulee really pop with the hints of almonds, orange zest, cinnamon and honey of Redbreast Lustau.”

The cocktail for each course can also be swapped for a neat pour of Redbreast.

Redbreast Espresso Martini

Ingredients:

  • 3/4 oz simple syrup
  • 2 oz espresso or cold brew
  • 2 oz Redbreast 12 yr

Instructions:

Add ingredients to an ice-filled mixing tin, shake vigorously and strain into a chilled cocktail glass. Garnish with 3 espresso beans in the shape of a shamrock.

Dublin-Style Mint Julep

Ingredients:

  • 5 Mint Leaves
  • 1/2 oz cane syrup
  • 2 oz Redbreast 12 yr

Instructions:

Swab inside of the Julep cup with mint, soft shake with ice cubes and mint, fine-strain into the ice-filled julep cup, add a bouquet of mint and dusting of powdered sugar.

Cork Cobbler

Ingredients:

  • 1/2 oz simple
  • 3 oz Fino Sherry
  • 1/2 oz Redreast Lustau, float
  • Lemon and orange wheel halves
  • Mint bouquet

Instructions:

Shake with lemon wheel, half orange wheel, and pineapple slice. Strain into highball glass over crushed ice
