Cocktail of the Week: Palio di Siena

The Kentucky Derby has been delayed but that doesn’t mean we can enjoy a julep. D.C.’s Officina offers an Italian take on the ideal spring cocktail with Palio di Siena.

Known in Italy simply as Il Palio, Palio di Siena is a horse race that is held twice yearly, in July and August, in Siena. Ten horses and riders, bareback and dressed in the appropriate colors, represent ten of the seventeen city wards.

Ingredients:

  • 1 1/2 oz. Bonded Bourbon
  • 1/4 oz. Cynar
  • 1/4 oz. Fernet Branca
  • 1/2 oz. Demerara Syrup
  • Mint

Instructions:
Combine all ingredients in a shaker tin and shake. Double strain into a julep cup. Add crushed ice and garnish with mint. For Demerara Syrup, combine 1 part boiling water and 1 part Turbinado sugar. Stir until sugar dissolves.
