When New York’s Seamstress closed, many cocktail fans (including this writer) were saddened. However, Pamela Wiznitzer and Luis Hernandez are back and better than ever with Gibson + Luce.
Located beneath Henry by JJ at The Life Hotel (where Wiznitzer and Hernandez also run the cocktail program), the speakeasy’s new menu focuses on original craft cocktails and large format drink service, with a selection of highballs and legacy drinks from Hernandez. The menu includes many “closed loop” cocktails that use the entirety of an ingredient. Hernandez sources ingredients from the kitchen and utilizes excess ingredients for their cocktails as well.
Menu highlights include:
- MarTiny Service with French-style, half-size martinis on draft for 2, 4, 6 or 8, served in flasks with house-pickled onions, marinated olives and lemon twists. Tinctures of Bergamot, Lemon, Olive and Tea are served for guests to try their own combinations
- Spanish Negroni, an aromatic cocktail that balances the salinity of the house-cured olives with the bitterness of Campari, along with Oloroso Sherry and St. Germain
- Pick Me Up is a draft cocktail with cold brew liqueur from Mr. Black, Jim Beam Black Bourbon, bitter chocolate, demerara, sesame and NO2
- Cosmo Spritz with vodka, pomegranate, orange liqueur, lime and white tea that are clarified with milk to produce a milk punch served with sparkling rose and soda, in a flute coated with cranberry sugar
- Midori Sour is a play on the classic with a more balanced flavor featuring Aviation gin, melon, fresh Granny Smith apple juice, matcha, lemon, egg white and bitters
- Bucket of Bubbles features the guest’s choice of Champagne and Sparkling Rose, served in a bucket of edible rose flavored bubbles
- The Muse is a slushy drink made with Puerto Rican aged rum, pineapple, cane, lemon, bitters and nutmeg. Luis Hernandez created this original cocktail which was the Bacardi Legacy 2017 NYC winning cocktail
- Super Green, a rum cocktail that incorporates Clairin, Yuzu, Ginger and Ale, utilizes celery leaves sources from the kitchen that are dehydrated and toasted in the oven, and used as a celery ash to top the drink.
Chef JJ Johnson curates the experience with a new signature playlist, a perfect mix of soul and trap music. A limited number of off the menu items from Chef JJ will also be available at the bar.
