Redbreast Irish Whiskey recently unveiled the first limited edition release from its Iberian Series collection. This dedicated series celebrates the distillery’s connection to Iberia’s and Ireland’s rich heritages in the wine and spirits world.
Redbreast Pedro Ximénez Edition is a single pot still Irish whiskey, triple distilled and initially matured in former bourbon and oloroso sherry casks re-casked into Pedro Ximénez Hogsheads from the southern tip of Spain, for 12 to 22 months. Just half the size of a standard sherry cask, the increased surface area of the hogshead intensifies the flavor contribution from the Pedro Ximénez-soaked wood, imparting notes of treacle, raisins and orange zest thanks to the sweeter grape variety used in the world renowned sherry.
This is the first limited-edition release from the Iberian Series collection, joining the Lustau Edition, which launched in 2016. Lustau Edition remains the anchor expression within the Redbreast Iberian Series and is joined by a new limited-edition release from time to time.

Crafted to the exacting standards of Leighton and Blender Dave McCabe, Redbreast Single Pot Still Irish Whiskey Pedro Ximénez Edition is bottled at 92 proof and is now available for $95.99.
