Irish Whiskey Bonder J.J. Corry and The Dead Rabbit, one of the world’s premiere cocktail bars, have announced their exclusive collaboration, The Cask Series. Part of The Dead Rabbit’s “Spirits of Ireland” brand, The Cask Series is a limited edition Single Malt Irish Whiskey finished in Amontillado, Oloroso, Palo Cortado, and Pedro Ximénez casks.

The release consists of a vatting of Single Malt Irish Whiskey from J.J. Corry’s library of flavors. The Cask Series was matured in ex-bourbon casks and finished for 12-18 months in selected Bodegas Garvey Amontillado, Palo Cortado, Oloroso and PX sherry casks sourced through artisanal cask producers Casknolia in Montilla.

This release marks the first bottling under The Dead Rabbit’s “Spirits of Ireland” brand, centered around Director of Irish Whiskey, Mark McLaughlin’s close relationships with brands and distilleries across the country. They set out to conceptualize and execute collaborations that will further the depth of flavor in their Irish whiskey selection at The Dead Rabbit NYC, and across future TDR venues nationwide.

“J.J. Corry has been one of the most exciting Irish Whiskey brands to watch in recent years. By revitalizing Irish Whiskey bonding, they’ve brought an entire category back to life, and we are delighted to have been able to create such an immensely flavourful whiskey alongside Louise McGuane and her team,” shared The Dead Rabbit’s Director of Irish Whiskey Mark McLaughlin.

J.J. Corry has a reputation as Ireland’s first modern Whiskey Bonder and has an unparalleled library of Irish Whiskey flavors allowing them to blend outstanding expressions like The Cask Series.

“It was such a pleasure to work with The Dead Rabbit team to create this bespoke single malt,” said J.J. Corry Founder and CEO Louise McGuane. “Jack and the team are a really important part of the Irish Whiskey Industry, like us, they represent the modern face of Irish hospitality and the makers and creators that make it so special. A wonderful collaboration with delicious results.”

In her role as the leading modern Irish Whiskey Bonder, McGuane has curated an unrivaled library of Irish Whiskey flavors, drawn from both traditional and contemporary distilleries on the island of Ireland. Louise then travels the world to seek out the rarest and finest of casks from cooperages, bodegas, and wineries and meticulously matches them with Irish whiskies from her library of flavors.

Exclusively available at The Dead Rabbit NYC and jcorry.com, only 250 bottles of the The Dead Rabbit and J.J. Corry Cask Series will be available at 100 proof for $89.99.
