Cocktail of the Week: Isle & Anchor

Last October, we introduced you to Knappogue Castle’s Women In Whiskey Cocktail Series. This week’s cocktail comes from that series.

Created by Meaghan Dorman, Bar Director at New York’s Raines Law Room and Dear Irving, the cocktail is inspired by her Dublin-born Grandma Dee. It showcases the bright stone fruit and cereal grain notes of the spirit. “There was no occasion too small for Dee to host a party, often with a made-from-scratch pie,” says Dorman. “The baking spice notes and a hint of Northeast apple complement the whisky. It reminds me of my very first introduction to hosting, which came from our family legend herself.”

Ingredients:

  • 1 1/2 oz Knappogue Castle 14-Year-Old Single Malt Irish Whiskey
  • 3/4 oz Lemon juice
  • 1/2 oz cinnamon syrup*
  • 1/4 oz apricot liqueur
  • 2 oz organic apple juice
  • 4 dashes Angostura Bitters

Instructions: Build in a cocktail shaker, whip shake briefly with a handful of pebble ice, and strain into a rocks glass with pebble ice. Garnish with three apple slices and float four dashes of Angostura Bitters on the top.

*For cinnamon syrup, combine 2 cups sugar with 1 cup hot water and stir well to dissolve the sugar. Let this sit overnight with 4 cinnamon sticks. Strain and seal in an airtight container and keep in the refrigerator.
