Common called it “The City of Wind.” Michael Jordan became a legend there. And any number of the world’s biggest comics earned their stripes at Second City. Chicago is known for many things, including its amazing food scene. But what doesn’t seem to get as much attention is it’s cocktail culture — and that’s a real shame because its both impressive and dynamic. Beyond its well-known sports and tiki bars, there’s an amazing craft cocktail movement that’s been happening in town for quite sometime. One of the latest additions to that community is Waydown.
Located on the top floor of the recently-opened Ace Hotel Chicago, this dimly lit cocktail den is perfect for date night or hanging with friends. And in the warmer months (Chicago speak for July and August), they also have an outdoor patio with beautiful views of downtown (seen above). The bar, named after Chicago native John Pine’s “Way Down”, says to have drawn its inspiration from the tradition of Midwestern watering holes.
Curated by award-winning bartender Caitlin Laman and helmed by General Manager Adam Sarkis, their seasonal cocktail menu features flavorful riffs on classics that include a variety of spirits and a ton of fresh juice. Some of my favorites were Caravan of Fools (Bourbon, Amaro Meletti, Kina, Ginger, Lemon and Bitters), Illegal Smile (Ford’s Gin, Campari, Alessio Torino, Cacao), Sherry Colada (Denizen Aged Rum, Amontillado Sherry, Pineapple, Coconut and Lime) and their Jungle Bird (Rum, Camapari, Pineapple and Lime) which they have on tap via their own frozen drink machine. Their bar staff can also make you any number of classic cocktails and they a great selection of spirits, beers and wine.
And if you love the Waydown, but also want a nice meal to go with your beverages, Laman also oversees the program at the hotel’s restaurant, City Mouse. So, the next time you’re in the Chi, stop by and have a Jungle Bird!
